Meal Plan Monday

Good morning! I hope everyone’s Monday is off to a good start. Today is a fun day to enjoy all the creativity and hilarity of costumes and decorations. While shopping at Costco I ran into “Cleopatra” stocking up for the office party. But along with the fun there are still chores to do and planning to be done. This weekend the weather was beautiful, and I pulled my kayak out and headed to a lake. It was marvelous to get out and get some fresh air, exercise, read, and have a quiet, peaceful time to think through and plan for the week ahead.


To top the evening off last night the husband and I got our scary movie/Halloween fix in by watching for the first time, shocking I know, Alfred Hitchcock’s Psycho. What better way to kick start Halloween than to watch a classic from the master of suspense? Speaking of suspense I  will not keep you in it any longer. 😉 Here is the meal plan for the week. I went pretty simple this week.

Monday: Baked sweet potato’s, broccoli, and homemade applesauce.

Tuesday: Spaghetti squash with tomato sauce and salad. You can read how to bake the squash here.

Wednesday: Salmon with quinoa and asparagus. You can read how I prepare mine here.

Thursday: Left over spaghetti squash and salad.

Friday: Left over salmon, quinoa, and asparagus.

Saturday: Egg plant pizzas. You can read how to make it here.
